Kumo No. 1 is a first-harvest Uji tencha, shaded twenty-one days and ground on granite at forty turns a minute. Thirty grams, which is about fifteen bowls, and it holds its colour for six weeks.

How a bowl of No. 1 comes together

Three minutes at the counter. The only thing worth being fussy about is the sieve, because matcha clumps and a clump will not whisk out.

01 · Sift

Two grams through the mesh

Weigh two grams and push it through a fine sieve straight into a warmed bowl. Skip this and you drink lumps.

02 · Whisk

Seventy millilitres at 80 °C

Never boiling. Whisk in a brisk W, wrist only, for fifteen seconds.

03 · Rest

Drink it before the foam goes

A good bowl holds its head for about a minute. Sweet grass first, then a short bitter finish that clears.
